Up Your Brunch Game – Savory Spicy Cheese Waffles Recipe

Savory cheese covered waffles bring a delicious twist to your brunch this weekend.
Waffles. The idea immediately brings to mind syrup and butter and powdered sugar with coffee and orange juice. But what if we take waffles and turn them into something savory? Cheese melting over the top with garlic, onions, mushrooms and pepper. A surprise your friends will sure to remember.


8 waffles (frozen or home made) lightly toasted
¼ cup mayonnaise
2 teaspoons Worcestershire sauce
⅛ teaspoon cayenne pepper
1½ teaspoons brown mustard
3 scallions, finely chopped
2 teaspoons garlic, minced
2 cups Grand Cru® Original, shredded, divided
8 large brown mushrooms, thinly sliced


Preheat broiler.
Place toasted waffles on lightly greased baking sheet.
In a medium mixing bowl combine mayonnaise, Worcestershire sauce, cayenne, mustard, scallions, garlic and 1½ cups of Grand Cru® Original; mix well.
Evenly distribute cheese mixture atop waffles and top with mushrooms.
Top with remaining Grand Cru® Original.
Broil approx. 10 minutes.
Substitute roasted red peppers, asparagus or artichoke hearts for mushrooms.

To save time and you can always use pre-made frozen waffles that you just lightly toasted, but this is also delicious with home made waffles. You can even throw a little of the Roth cheese in with the batter, but not too much.  Pair this with any of the Brunch Recipes like Maple and Bourbon Bacon or Quiche Lorraine a la Hops and you’ll be set.
