New Thanksgiving Recipes

There is nothing more predictable than Thanksgiving dinner.  Though very tasty it is usually this: turkey, mashed potatoes, stuffing, and gravy.  Add in some green beans if you’re feeling festive.  But why not add something new to the Thanksgiving dinner?  This chipotle carrot salad recipe would also be a great addition onto the table for Thanksgiving.  The usually starch heavy Thanksgiving dinner can use a little more vegetable recipes if you ask me. While there is nothing on the table I don’t like during the holidays this new Thanksgiving recipe would add a nice spice to a usually mellow Thanksgiving dinner.   If you are looking to stay away questionable ingredients, you can start with the mayonnaise.  Just Mayo is non-GMO, gluten-free, soy free, dairy-free, lactose-free, and cholesterol-free. And once you get the mayo taken care of, throw some heat into it with chipotle!  POW!


  •  8 carrots
  • 2 tsp chopped thyme
  • 2 tbsp chopped parsley
  • 1 tsp maple syrup
  • ½ cup Chipotle Just Mayo™ (recipe below)
  • Salt and pepper (to taste)

Preheat oven to 350˚F. Lightly grease or line a sheet tray.

Peel and cut carrots on bias. Place chopped carrots in a bowl and toss with maple syrup, thyme and oil (just enough to coat). Add a pinch of salt.

Roast dressed carrots on greased or lined sheet tray for 8 minutes or until almost fork-tender. Remove from oven and let cool.

Once fully cooled, toss carrots in a bowl with Chipotle Just Mayo™ and garnish with chopped parsley.


While used in the Chipotle Carrot salad recipe above, this would also be great on the day after Thanksgiving turkey sandwich.  Um, yes please.

  • 16 oz jar Just Mayo™
  • ¾ teaspoon Paprika
  • ¾ teaspoon Tabasco sauce
  • 1 teaspoon Embasa chipotle peppers in adobo sauce
  • ½ teaspoon Sugar
  • ¼ teaspoon Salt
  • ¼ teaspoon Onion powder
  • ¼ teaspoon Chipotle chili powder
  • ¼ teaspoon Black pepper

Combine ingredients and blend thoroughly!
