Fresh… real life is messy


Oatmeal with cherries and apricot.

If you haven’t realized by now, my life is a little upside down. And the last thing i need to think about is what I’m eating or how many calories are in anything. But sometimes, eating a hotdog at costco, is just easier :-/

I am a bipolar eater. I am either healthy fresh fruit and veggies from my own garden, or it’s Big Macs and Burritos. Oh and french fries with ranch dressing.

I am usually OK when it comes to my breakfasts, but it goes down hill from there. Like today’s breakfast of Apricot & Cherry Oatmeal with Toasted Almonds is something I would eat on my own. If I would remember to buy oatmeal.

Can I say that the Philly Cheese Steak Whole Wheat Wrap with Sauteed Mushrooms was just fantastic. I am a HUGE cheese fan. HUGGGGE. If I could eat a block of cheese every day and not have to worry about dropping dead or not fitting through my front door, I would. This thing, was oooey, gooey, drippy, fantastic cheesey goodness. And let me add, these wraps are not tiny. These things are just about the size of the burritos I usually get for lunch (and just as yummy)

So, for dinner the Walnut Crusted Chicken Apricot Roulade with Southwestern Corn Saute and Steamed Brocoflower. This was my Fresh Diet Thanksgiving dinner. The sweetness from the roulade was great teamed with the southwestern corn and it had the texture of stuffing.  The crunchy walnut crust on the chicken, made it seem like crunchy fried goodness.  Or, my favorite part of the Thanksgiving dinner, the crunchy skin on the turkey.  dontlookatmelikethat

All that tastiness for dinner without the uncomfortable overeating feeling!

And for dessert I still have the muffin to look forward to! Let’s see if I can fit into that dress for the party. ;-)
