Cold Weather Recipe

With the colder weather and being inside more, our tummies are looking for more comfort food. Hot, creamy and filled with yum. One of our favorite colder weather recipes is the Chicken Bacon Hot dish by Sam The Cooking Guy. We learned this recipe from Sam while hanging out behind the scenes of his web series.

The Chicken Bacon Hot Dish takes what could be an updated chicken pot pie filling and tops it with crispy tater tot potatoes instead of inside of a flaky pie crust. Surprise additions aren’t just for the topping. The filling of the hot dish gets a new twist on flavor with a splash of Vermouth and Sriracha hot sauce. This isn’t your frozen pot pie that’s for sure!

The hot dish is traditionally a mid-western dinner. This version is kind of a mix between pot pies and a casserole. All we know for sure is that it is delicious.

While you won’t need a pie plate for this Chicken Hot Dish recipe, you will need a deep pan of some sort, and a baking sheet for the tots. Although, you COULD use a pie pan if you really wanted to, that might make for a nice presentation. We have even made this dish without putting the Tater Tots on the top until serving. We scooped the chicken filling into bowls and placed the tots on the top.

Chicken Bacon Hot Dish – Recipe

Ingredients

  • 1 yellow onion, diced
  • 1 cup mushrooms, quartered
  • 8 strips of ready bacon, chopped
  • 2 tablespoons vermouth
  • 2 cups shredded chicken (Sam uses roasted chicken you can get at the grocery store)
  • 1/4 cup flour
  • 1/3 cup chicken broth
  • 1/3 cup milk
  • 1/2 cup frozen peas
  • 1-2 tablespoons Sriracha
  • One 26 ounce bag Tater Tots

Instructions

  • Preheat oven to 350
  • Cook onions over medium heat until soft
  • Add mushrooms and bacon
  • Add vermouth and cook for 2 minutes
  • Sprinkle in flour
  • Stir everything together until everything is covered in flour
  • Add chicken stock and milk
  • Mix together
  • Add peas & season generously with salt & pepper
  • Add Sriracha, stir thoroughly
  • Pour mixture into a 9×9 baking dish and top with frozen tots
  • Bake for 30 minutes or until tots are crispy
  • (This is Sam’s suggestion, but we prefer cooking the tater tots FIRST so they’re crispy all over, then putting them on top of the chicken mixture and baking just for about 5 minutes.)
