Snacks that are festive while still being easy to make are sometimes hard to come by this time of year. They’re either traditional and oh so fussy or they are easy to make and someone seen as not nearly nice enough. That is just ridiculous! Anything treat made with love is always appropriate, and festive!

Luckily, Christmas lends itself to popcorn treats and being able to make things together.

These popcorn balls also bring the colors of the holiday together with the popcorn treats. Red from the dried cranberries, and a light green from the salted pistachios. All of this rolled together with the white popcorn is just absolutely fun and perfect for the holiday!

These popcorn ball holiday treats can be especially fun for little hands to help with. They are more tasty with the salted pistachios than plain pistachios.  If you want to give helpers something to do, you can give them roasted salted shelled pistachios to shell. It takes a while and gives kids, and others, something to keep them occupied while you take care of other things.

IMPORTANT – The marshmallow mixture will be extremely hot. Little hands must be kept away from the mixture when it is right off of the stove.

Cranberry & Pistachio Popcorn Balls – Recipe

Ingredients

  • 6-8 cups of popped popcorn (We used half a bag of Gaslamp Popcorn Olive Oil and Salt)
  • 1 bag large marshmallows
  • 1/2 stick of butter
  • 1/4 cup – 1/2 cup salted pistachios
  • 1/4 cup – 1/2 cup dried cranberries

Directions

  • Put a large pot on medium heat
  • Add the butter first to get it melted and covering the bottom of the pot.
  • Once the butter is melted, add the marshmallows.
  • Stir constantly with a butter covered spoon or the marshmallows may burn.
  • Once the marshmallows are melted, add the cranberries and pistachios.
  • Stir
  • IMPORTANT – The marshmallow mixture will be extremely hot.
  • Turn the heat down on low and fold in the popcorn.
  • Make sure everything is mixed thoroughly.
  • Turn off the heat and wait for the mixture to cool enough to touch.
  • With greased hands CAREFULLY form popcorn mixture into softball sized balls.
  • Set out on parchment paper to cool.

If you would rather not bother with greasing your hands, or the possibility of the popcorn being too hot, you can make this into popcorn bars! Instead of forming into balls, lightly grease a pan or baking dish and CAREFULLY turn the mixture into it. Spread out the mixture of the popcorn, cranberries, and pistachios and let set. Once cool cut into bars.
