New Take on a Summer BBQ Side Dish – Watermelon With Feta

It’s officially Summer in Southern California and with the Fourth of July moments away, that means it is also backyard barbecue season! You’ve got your usual suspects hitting the grill such as your burgers, and hot dogs, but what about the sides? I’m always on the look out for something yummy, healthy, and doesn’t have mayo or is super processed. Gotta watch my pinup girl figure, you know ;-)

One of BusyBeeBlogger.com ‘s favorite things to do is to just slice a watermelon into chunks, but this recipe I found puts a nice upgraded spin on it. It might even be fancy enough to have on one of your many mid-Summer date nights.

INGREDIENTS

Small watermelon, preferably seedless (1 whole)
Basil leaves, chopped (3 leaves)
Feta or goat cheese, crumbled (1 C.)
White balsamic vinegar (3 tbl.)
Champagne vinegar (3 tbl.)
Extra virgin olive oil (¼ C.)
Salt (½ tsp.)
Freshly ground pepper (½ tsp.)

 

DIRECTIONS

Step 1: Slice the watermelon into half-inch wedges

Step 2: Fan the wedges out on a tray in rows with the watermelon “flesh” exposed

Step 3: Sprinkle the vinegars and oil onto the watermelon, one at a time

Step 4: Crumble the cheese and sprinkle onto the watermelon

Step 5: Sprinkle salt and pepper

Step 6: Stack the basil leaves, roll tightly and slice thinly
