Mushroom Monday… a few days late *CONTEST!!!*
This was supposed to be posted on Tuesday, but I’m a little late. Can you all forgive me?
I have decided to start using more and more mushrooms in my diet. I am not taking meat out what I eat completely, are you kidding me?, but rather I like mushrooms. So why not learn how to make more dishes with them and expand my horizons?
If you are looking to try mushrooms why not just looking into SWAPPING different types of mushrooms for some of the meat in your recipes? The Mushroom Channel has a TON of ways to just swap mushrooms and veggies into the food I already eat! Easy mushrooms.
So the recipe I made Monday night was a modified pasta sauce.
Serves 2 with leftovers
2 cups of mushrooms (We used Crimini Good substitute for beef)
1-2 cloves garlic minced
2 – 3 cups cherry/roma/heirloom tomatoes (whatever you can get. I had cherry, heirloom, and yellow in my garden)
1 chicken breasts if desired
1/2 package of penne pasta cooked
Saute onion and mushrooms in large pan on med/med low. DO NOT CROWD MUSHROOMS. They will steam and not saute if you do that. Remove from pan. Add garlic to pan with small amount of olive oil (1/2 Tablespoon perhaps). Add tomatoes. Warm tomatoes through.
If you decided to brown chicken breasts, remove tomatoes from pan and saute the chicken now. Brown and cook through on one side. Turn, cook for about 2 minutes and add garlic/tomatoes, and onion/mushrooms back to pan.
Add cooked penne pasta to the pan allowing the pasta to absorb the flavors of the sauce.
